Classic Veggie Chips Recipe
The classic healthy eating hack. Swap potatoes for veggies when a chip craving comes knocking. Zoe Rollings shares her super simple but extra delicious crispy Veggie Chips recipe with us, feel free to mix up the veggies and in some of whatever you fancy.
1 medium sweet potato
3 tbsp olive oil
Sprig parsley, chopped
1 tsp paprika
Preheat oven to 200C.
Chop parsnip and sweet potato into ‘chip size’ and place on baking tray, drizzle with olive oil and bake for 40 mins.
Serve vegetable chips, topping parsnip with parsley, and sweet potato with paprika.
