Summer Bruschetta – Recipe

Photography and food blogger, Zoe Rollings, tempts us with her Summer Bruschetta Recipe. Now all we need is some sunny weather to enjoy our new favourite snack to!

Ingredients:
Slices of your favourite rustic bread
Ricotta cheese
Avocado
Tomatoes
Spring onion
Parsley

Top bread of choice with the ricotta, sliced avocado, a medley of tomatoes, spring onions, and finely chop the parsley to sprinkle.
Handy tip for avocados, cut in half and peel skin instead of scooping out, then slice.

Tomatoes used: red grape tomatoes, golden grape tomatoes, baby roma tomatoes, Zebrino tomatoes, red and yellow cherry tomatoes.
