Chia seeds have been around for centuries as part of Mayan and Aztec diets. Today people everywhere are aware of these seed’s nutrients and health benefits. They contain more omega 3 fatty acids than salmon gram for gram, and besides this they are a rich source of protein, fibre, calcium and iron and are anti-oxidants to top it all off. It’s important to add liquid to them in order to make them easy to digest and soak up all their goodness. With the warmer weather ahead I liked the idea of making a “Chia Fresca” which has been a popular drink in Mexico and Central America for many years. By mixing chia seed with fresh lemon water it creates sustained energy for long periods of activity making this a great home-made energy drink. I added a little organic sweet maple to ease out the lemon and a pinch of cayenne to kickstart the metabolism. I love this in the morning when I’m on the run, it works like a natural coffee!

Ingredients

Juice of 1 (organic) lemon

Pinch of cayenne

2 to 3 Tsp Chia Seeds

2 tsp Maple Syrup

Water as needed

Instructions

Mix all ingredients, shake if you have a good jar, or stir, let it rest in the fridge for 10 minutes and enjoy!
